Seitan Stew

Seitan Stew

Ingredients

  • 12 oz. seitan, cut into 1 inch pieces
  • 2 cups of mushroom broth
  • 2 cups of vegetable broth
  • 2 cups of water
  • 1/4 cup tamari
  • 1 diced tomato
  • 12 oz. frozen carrots and peas
  • 1 cup red wine
  • 1 tbsp vegan Worcestershire sauce
  • 1 tbsp balsamic vinegar
  • 1 bay leaf
  • 1 tsp cinnamon
  • 2 tsp nutmeg
  • 2 tsp cloves
  • 2 tsp cumin
  • 2 tsp coriander
  • 1 tsp cayenne pepper
  • 1 tsp black pepper
  • 1/4┬ácup flour
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • olive oil

Instructions

  1. In a non-stick pan, cook the onions and garlic in olive oil over medium heat until brown.
  2. In a large pot, add in the mushroom broth, vegetable broth, water, and tamari. Bring to a boil. Mix in the onion and garlic.
  3. Add in the rest of the ingredients except for the flour. Reduce to a simmer. Sprinkle in the flour, stirring as you do so.
  4. Cover and let simmer for 45 minutes, stirring occasionally. The liquid should reduce by at least half or more, depending on preference. Remove the bay leaf and serve over rice.
