Vegan “Lobster” Bisque


  • 1/2 tsp kelp powder
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 8 oz. white mushrooms, loosely chopped
  • 3 oz. tomato paste
  • 1.5 pints coconut creamer
  • 1 cup vegetable stock
  • salt and pepper, to taste
  • 2 bay leaves
  • fresh thyme
  • 3 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/4 cup white wine


  1. In a large pot, heat the oil and cook the onions, garlic, and mushrooms until brown.
  2. Add in the vegetable stock, tomato paste, and coconut creamer and bring to a boil. Simmer for 20 minutes. Add salt, pepper, paprika, cayenne pepper, kelp powder and bay leaves about halfway through. Add as many chopped sprigs of thyme as desired.
  3. Add in the white wine and continue to simmer for an additional 15 minutes. Remove the bay leaves and garnish with thyme right before serving.
